The Ayrshire breed was developed in the county of Ayr in southwestern Scotland.  This area is cold and damp with relatively little forage available.  Hence, animals were selected for hardiness and excellent grazing ability.  The color pattern of the Ayrshire breed varies from red and white to mahogany and white.  The breed is more nervous than other dairy breeds.  Early breeders were noted for careful selection in type, udder, and smooth, clean "dairy type" bodies.
